Asparagus-Potato Hash with Goat Cheese and Eggs
Crispy potatoes sautéed with tender asparagus and topped with perfectly cooked eggs. A hearty, wholesome hash that’s simple, satisfying, and perfect any time of day.

Preheat the oven to 400°F and coat a sheet pan with cooking spray.
Toss the potatoes with 2 teaspoons oil and 1 teaspoon of the spice rub, then arrange cut-side down on the pan and bake 15 minutes, until just starting to brown and soften.
While the potatoes bake, pat the pork chops dry and rub with the remaining spice mixture. Trim the green beans and toss with the remaining teaspoon of oil and a pinch of salt.
Remove the pan and push the potatoes to one side. Add the pork chops to the center and the green beans to the other end.
Bake 10 more minutes, until the pork reaches 145°F and the vegetables are done. If the vegetables need more time, move the pork to a plate, cover to keep warm, and return the vegetables to the oven.
Meanwhile, combine the mustard, mayo, honey, coconut aminos, and garlic powder for the sauce, and season with salt and pepper.
Sprinkle with fresh parsley if desired and serve with the honey mustard sauce.
