Asparagus-Potato Hash with Goat Cheese and Eggs
Crispy potatoes sautéed with tender asparagus and topped with perfectly cooked eggs. A hearty, wholesome hash that’s simple, satisfying, and perfect any time of day.

Preheat the oven to 350°F and coat a 9x13-inch baking dish with nonstick spray or butter.
Cook the potatoes in a skillet with a few tablespoons of olive oil for 5 to 7 minutes, until slightly crispy, then arrange evenly in the bottom of the dish.
Combine the egg mixture ingredients in a large bowl and set aside.
Heat 3 tablespoons olive oil in a medium skillet and sauté the garlic, tomatoes, and scallions for 5 minutes. Add the spinach and cook 2 more minutes, until just bright green — don't overcook.
Combine the vegetables with the egg mixture and pour over the potatoes. Bake uncovered for 40 to 45 minutes, until a knife inserted near the center comes out clean.
Let stand 10 minutes before garnishing with sour cream and salsa.
